RICE NOODLES

Ingredients

Rice noodles

2 cups of Mixed vegetables

Onions (optional)

Sweet chili sauce.

1 Tbsp of extra virgin olive oil

Bring 4 cups of water to a boil. Remove from heat. Add noodles, let stand for 8 to 10 minutes or until noodles are soft, but firm. Rinse under cold water, set aside.

In a separate pot, bring 1 cup of water to a boil, add mixed vegetables. Boil until tender but not too soft. Drain, set aside

Chop of 1/4 of an onion

Heat 1 Tbsp of extra virgin olive oil. Toss in onions and mixed vegetables for 5 minutes .  Add noodles and chili sauce Cook until tender.

Kid friendly Zucchini pasta

5 to 6 zucchinis

1-2 tomatoes

Bell pepper

Basil

Oregano

Parsley

Lemon

Himalayan  pink sea salt

olive oil (optional)

1. Using a julienne peeler to slice the zucchini into noodles, when you reach the seeds stop.

2. Cut tomatoes into dice size.

3. Combine  zucchini and  diced tomatoes into a bowl and  seasoning to your liking.

4. In a blender add 2 tomatoes and bell pepper. Blend until liquified.

Pour tomato sauce over zucchini. mix and enjoy
