Raw green crackers (from whole foods)
Red bell pepper
In a bowl mash avocado until smooth
Cut red pepper into bit size pieces.
Spread avocado on cracker and top with red bell pepper.
2 cups of Mixed vegetables
Sweet chili sauce.
1 Tbsp of extra virgin olive oil
Bring 4 cups of water to a boil. Remove from heat. Add noodles, let stand for 8 to 10 minutes or until noodles are soft, but firm. Rinse under cold water, set aside.
In a separate pot, bring 1 cup of water to a boil, add mixed vegetables. Boil until tender but not too soft. Drain, set aside
Chop of 1/4 of an onion
Heat 1 Tbsp of extra virgin olive oil. Toss in onions and mixed vegetables for 5 minutes . Add noodles and chili sauce Cook until tender.
